The Old Fashioned is a favorite wintertime cocktail whether you’re relaxing at Friday happy hour or enjoying a casual dinner out. So, when bartender Scott Bailey was creating a new cocktail at Cane Rhum Bar, he turned to the Old Fashioned for inspiration.
"Come winter, I'm thinking about two things — drinking Old Fashioneds and escaping to somewhere warmer. This cocktail from Cane Rhum Bar combines the best of both worlds," says Travis Hartong of Bottles. "We're always impressed with the creativity of the Charleston beverage scene, and happy to continue supporting the efforts of the local bars and restaurants in our community."
He borrowed the classic elements of the Old Fashioned, but gave it a Caribbean twist to better fit the atmosphere at Cane Rhum Bar on East Bay Street. With more than 90 rums in stock, Bailey says they are constantly trying new items and love to include those on the cocktail menu.
Bailey received a sample of Paranubes Mexican Agricole Rum, new to the United States from Oaxaca, Mexico. Paranubes Rum is made by wild fermenting the fresh pressed juice of sugarcane grown without pesticide or fertilizer. It seemed perfect for a new cocktail.
To the Paranubes Rum, Bailey added a second base spirt: Clement Creole Shrub. Then, he mixed in passion fruit pureé, Luxardo Maraschino Liqueur plus a simply syrup and dash of orange bitters.
The result is Passion Old Fashioned – the heart of the Old Fashioned cocktail with a tropical, rum-infused twist. Bailey says the cocktail will be on the menu through the end of the year, but as long as Bailey has the ingredients on hand, he’s happy to mix up one up on request.

Bailey says this drink is easy to recreate a home with one tip: adhere to the ratios in the recipe to achieve the right blend of flavors.

Passion Old Fashioned:
Instructions- Assemble all ingredients in shaker with ice and agitate aggressively. Strain into a rocks glass with a large ice cube. Garnish with an orange peel twist. Enjoy!
1 oz. Paranubes Mexican Agricole Rum
1 oz. Clement Creole Shrub
2 oz. passion fruit pureé
1/2 oz. Luxardo Maraschino Liqueur
1/2 oz. lime juice
1/4 oz. scotch bonnet simple syrup
Dash of Angostura orange bitters
